パラダイスカフェ
書庫のタイトルの”パラダイスカフェ”。
以前にも書きましたが、この意味は、
『世界中を旅して、世界中のおいしいものを集めて、いつか自分で開きたいお店』の名前。
さりげなくおしゃれな”オープンカフェ”みたいな感じで、
さりげなく、南仏の田舎みたいな感じで。
バリ島にいいお店があったんだよね。イメージ通りの。
こういうことを思い始めたきっかけが、↓
”パンデサル”です。
オレの初海外は、大学時代に先生と発掘調査に行ったフィリピン。
”スモーキーマウンテン”なんてのもあって、当時マニラはまだ混沌としていた。
”トンド”なんてスラムがあったり、”マビニ”がまだ歓楽街だった頃ですね。
ピナツボ火山が噴火して、スービックが壊滅して米軍が撤退して、
それと同時に”オロンガポ”の街が死んだところを通り過ぎましたね。
ストリートチルドレンがバッグを引っ張ってきたり、
マニラに”乞食のシンジケート”がある、なんてお話も聞きましたし、
ピナツボの被害で街ごと”物乞い”と化した田舎町もありました。
当時の大統領は、コラソン・アキノ氏。
さんざんニュースで見た”アキノ氏暗殺事件”の奥さんですね。
ピープルズパワーで政権奪取したものの、
”主婦の片手間”なんて言われて、しょっちゅうクーデタ的な事件があったり政情不安だった頃です。
庶民はビンボーでも”人間くささ”があったし、子供たちの目は日本人の子供よりもキラキラ。
なんか経済的に豊かなだけが幸せじゃない、って当時思った。
いろんな価値観を、いろんな世界があることを認めなければならない、とても勉強になった。
そんなときに出会った食べ物が、”パンデサル”なんです。
フィリピンの朝食ではごくごく一般的なもの。
一般人の家に間借りで泊まったので、一般人の一般的な朝食に出会ったんですな。
焼きたての”パンデサル”と両面焼きの目玉焼き、
そして旬なジャイアントマンゴーのまぁうまかったこと!

”Pan de Sal"(塩のパン)
Ingredients(材料)
2 cups warm water (110 degrees F/45 degrees C)(45℃の熱いお湯、2カップ)
2 teaspoons active dry yeast(小さじ2杯のドライイースト)
1/3 cup white sugar(1/3カップの上白糖)
1/4 cup vegetable oil(1/4カップのサラダ油)
1 1/2 teaspoons salt(小さじ1.5杯の塩)
6 cups all-purpose flour(全粒粉6カップ)
2 teaspoons active dry yeast(小さじ2杯のドライイースト)
1/3 cup white sugar(1/3カップの上白糖)
1/4 cup vegetable oil(1/4カップのサラダ油)
1 1/2 teaspoons salt(小さじ1.5杯の塩)
6 cups all-purpose flour(全粒粉6カップ)
Directions
Put the warm water in a small mixing bowl and add the yeast and 1 teaspoon of the sugar; stir to dissolve. Let stand until creamy, about 10 minutes.
In a large mixing bowl, combine the remaining 15 teaspoons of sugar and the oil and mix until smooth. Add the salt, 1 cup of flour and the yeast mixture; stir well. Add the remaining 5 cups flour, 1/2 cup at a time, until the dough pulls away from the sides of the bowl.
Turn the dough onto a lightly floured surface and knead until smooth, supple and elastic; about 10 minutes. Lightly oil a large mixing bowl, place the dough in it and turn to coat the dough with oil. Cover with a damp towel or plastic wrap and let sit in a warm place until the dough has doubled in volume; about 1 hour.
Turn the dough onto a lightly floured surface and divide into 4 equal pieces. Form each piece into a cylinder and roll out until the 'log' is 1/2 inch in diameter. Using a sharp knife, cut each 'log' into 1/2 inch pieces. Place the pieces, flat side down, onto two lightly greased baking sheets. Gently press each roll down to flatten.
Preheat oven to 375 degrees F (190 degrees C).
Cover the rolls with a damp cloth and let rise until doubled in volume, about 30 minutes.
Bake at 375 degrees F (190 degrees C) until golden brown, about 20 minutes.
